Welcome Fall


Happy first day of Fall!!!!! Fall is such a BEAUTIFUL time of the year and I enjoy it even more because we get to experience it here in North Carolina. As much as I miss the beach in Florida, there's nothing like the weather becoming cooler and seeing the leaves change.

I hope this Fall is one of the best yet!


Here are pictures from Luna's sleepover. One of our neighbors has a Yorki-Poo named Tess. She is adorable! Our neighbor had her stepson over for the weekend and he's terrified of dogs. So, she asked us to take Tess for the night.

Little did I know Luna and Tess were going to make our living room their personal race track! All you heard that night was running and panting from two pint size monsters! hahaha...Justin was not happy :)

The next day Justin and I went to a place here in Mooresville called Lazy 5 ranch. We paid $20 for our entry and a bucket of feed. They gave us a list of animals we could not feed (zebras, bulls, and giraffe) and a map. No list of names of the animals we would see. I think they should probably do that to help people out.

After driving through we parked and got out to walk around the petting area. We met this parrot that told us hello and goodbye. It was so funny! My car looked terribly dirty and we were both a little grossed out. It was definitely fun, but I'm not going back until we have to, LOL.

This weekend, Justin and his dad are supposed to be racing. I had a t-shirt made for the occasion, but unfortunately, I don't think I'll have it in time to wear. Bummer!

Anyway, I'm off to relax and catch up on some reading! Goodnight!

My weekend of baking

I just love the weekends! Who doesn't? You get to do fun stuff and really anything you want. I love to do several things on the weekends. On Saturdays I love to do something with Justin and usually something out. We've started to try out new things every Saturday.

I'll do another post for our Saturday fun day.

But Sundays are another thing. We go to church and then do relaxing things. We didn't go today because the pastor was out and we decided to play hooky.

We usually do our own thing and mine is to BAKE AND COOK! Especially lately that I've found so many amazing recipes.

Today I made a few things that I've been dying to try out.

I made my first attempt at making Lara bars and the Rustic Peach Galette from chef Chloe. You can check out hers here.

First, my Lara bars...

Only 5 ingredients!

The ingredients: dates, cashews, chocolate chips, cinnamon, and pure vanilla extract!! I put everything in the food processor. Then rolled it into a ball, halved it, placed each between two sheets of saran wrap and formed into a bar.

I made mine thinner. After you shape them, they're refrigerated. They were sooo good!

Next my Peach Galette.


Utterly amazing! Unfortunately, I was so full from dinner that I only could fit two bites. I'll have dessert for tomorrow!

Chef Chloe is fantastic and I can't wait to make more of her stuff. You can read more about her at her blog, and she's only 22!


As for the Lara bars, that recipe comes from another blog I love, Oh She Glows. I'll be making the other flavors of Lara bars also from her site. Up next banana!

Fashion Week: Monique Lhuillier

First, let me say I had no idea fashion week was even going on in NY, but for one of my blogs that posted these pictures. I usually just scroll through it but when I saw these dresses I instantly stopped.

They are so jaw dropping beautiful!

I want every.single.one.of.them. I looove the colors and the sweetheart necklines. When I see these gowns I just want to find a dress identical but for much less expensive. Apparently, this designer's collections are known to be romantic and sweet.

Well, a girl can dream :)

Thirsty Thursday!

Today is my day to pop open a bottle of wine for our fav show: Vampire Diaries. Ooooo I LOVE that show!! Pre-show I love to turn up my itunes, sip some wine, and start cooking.

On tonight's menu: Quesadillas

I did use the regular cheese in mine since I didn't have my vegan one on hand. It was still delicious. I also added black beans.

I did prepare a salad but I never got to it, hehe.

Well, our show comes on in less than an hour!!!!! I can't stand the excitement!

Happy Independence Day!!!

For my first country Honduras!!!


Today they celebrate 189 years of independence from Spain since 1821.

Some facts on how they celebrate.
In Honduras, the people celebrate Independence Day passionately. Schools and colleges stay closed for the celebrations and children participate enthusiastically in music and dancing. Independence Day is marked by three days of celebrations and. Every year schools participate in a contest to determine which can exhibit the most prominent or distinctive presentation. Kindergartens parade on September 13, elementary schools on September 14, and high schools on September 15.

I left Honduras when I was 3 years old so I have no memories whatsoever of being there. I did go back when I was in 6th grade with my mom,, but even those memories have started to fade.

My grandparents, aunts, uncles, and cousins are still there from my mother's side. Recently, my grandparents have become ill so my mom and I are going to try to go in December. Cross your fingers because I would love to see my family before they go to heaven!

On another note, today I made a super yummy dish that turned out like a chili/stew.

I added some oil to a pot. Then an onion and a few garlic cloves. In went the peppers followed by the squash and zucchini. I add several spices and herbs like cumin, ground oregano, red pepper flakes, salt/pepper, parsley. I added a can of diced tomatoes and a can of black eyed peas.

Finally I threw in some Naan bread in the oven...yup sounds like a Latin/Indian dish :-)

No after pics! We devoured this and I was too hungry to take pics, lol. It was great though and super easy!
